Ingredients

  • 6 chicken thighs, boneless and skinless
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil
  • 10 cloves garlic, peeled and halved
  • 2 tablespoons brandy or chicken stock
  • 1 cup chicken stock
  • 1 teaspoon fresh rosemary, minced, or 1/4 teaspoon dried rosemary, crushed
  • 1/2 teaspoon fresh thyme, minced, or 1/8 teaspoon dried thyme
  • 1 tablespoon fresh chives, minced, for serving

Directions

Step 1 –Sprinkle the chicken with the salt and the pepper.

Step 2 –In a large cast-iron skillet or other heavy skillet, heat the oil over medium-high heat.

Step 3 –Brown the chicken in the oil on both sides, about 2-3 minutes.

Step 4 –Transfer the chicken to a plate.

Step 5 –Transfer the skillet from the heat and add the garlic and the brandy.

Step 6 –Return the skillet to the heat and cook the garlic mixture, while stirring, over medium heat until the liquid is almost evaporated, about 1-2 minutes.

Step 7 –Stir 1 cup of the stock, the rosemary, and the thyme into the sauce mixture.

Step 8 –Return the chicken to the pan.

Step 9 –Bring the chicken mixture to a boil.

Step 10 –Reduce the heat and simmer, uncovered, until the chicken reaches 170 degrees F internally, about 6-8 minutes.

Step 11 –Sprinkle with the chives and serve.
