Ingredients
- 1 1/2 cups all-purpose flour
- 1 cup yellow cornmeal
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon baking soda
- 1 cup buttermilk
- 1 cup cottage cheese
- 3 eggs
- 1/4 cup olive oil
- 1 cup frozen corn
- 1 tablespoon butter, plus more, to taste, for serving
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Place a cast-iron skillet in the preheating oven.
Step 3 –In a large bowl, add the flour, the cornmeal, the sugar, the baking powder, the salt, and the baking soda and whisk to combine.
Step 4 –Add the buttermilk, the cottage cheese, the eggs, and the oil to the cornmeal mixture and stir until it is just combined.
Step 5 –Stir the corn into the cornbread batter.
Step 6 –Transfer the cast-iron skillet to a wire rack. Add 1 tablespoon of the butter to the warm skillet and let it melt.
Step 7 –Pour the cornbread batter into the prepared skillet and bake until it is golden-brown on top and a toothpick inserted into the center comes out with just a few clean crumbs, about 25-35 minutes.
Step 8 –Slice and serve the cornbread with the extra butter.
