If you need a New Favorite Cornbread, this one will forever be at the top of the list. What makes it so special? Well, for one, the sweetness and fluffiness have absolutely been perfected. Oh, and the bottom is coated in melted buttery goodness and what’s not to love about that?! Delicious with a bowl of chili or next to any of your Southern favorites, you’ll soon understand why this is your New Favorite Cornbread!


  • 1 1/2 cups all-purpose flour
  • 1 cup yellow cornmeal
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 cup buttermilk
  • 1 cup cottage cheese
  • 3 eggs
  • 1/4 cup olive oil
  • 1 cup frozen corn
  • 1 tablespoon butter, plus more, to taste, for serving


Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Place a cast-iron skillet in the preheating oven.

Step 3 –In a large bowl, add the flour, the cornmeal, the sugar, the baking powder, the salt, and the baking soda and whisk to combine.

Step 4 –Add the buttermilk, the cottage cheese, the eggs, and the oil to the cornmeal mixture and stir until it is just combined.

Step 5 –Stir the corn into the cornbread batter.

Step 6 –Transfer the cast-iron skillet to a wire rack. Add 1 tablespoon of the butter to the warm skillet and let it melt.

Step 7 –Pour the cornbread batter into the prepared skillet and bake until it is golden-brown on top and a toothpick inserted into the center comes out with just a few clean crumbs, about 25-35 minutes.

Step 8 –Slice and serve the cornbread with the extra butter.
