Ingredients

  • 1 1/4 cups self-rising flour, plus more, to taste, for dusting a work surface and for the dough
  • 1 cup Greek yogurt
  • 1 teaspoon carne asada seasoning
  • 5 large eggs
  • 1 cup Colby cheese, shredded
  • 1 cup frozen shredded hash brown potatoes, thawed
  • 2 tablespoons salsa
  • 4 slices bacon
  • green onions, to taste, sliced, for garnish

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Spray a sheet pan with nonstick cooking spray.

Step 3 –Lightly dust a work surface with the extra flour.

Step 4 –In a medium bowl, add the Greek yogurt, the remaining 1 1/4 cups of the flour, and the carne asada seasoning and stir until a shaggy dough forms.

Step 5 –Transfer the dough to the prepared work surface and knead until it is smooth, about 5 minutes. Continue to add more of the extra flour to the dough if it is too sticky.

Step 6 –Shape the dough to fit into the prepared sheet pan.

Step 7 –Bake the dough for 12 minutes.

Step 8 –In a medium bowl, add the eggs, the cheese, the hash browns, and the salsa and stir to combine.

Step 9 –Heat a large skillet over medium-high heat.

Step 10 –Add the bacon to the skillet and cook, turning occasionally, until evenly browned, about 7 minutes.

Step 11 –Transfer the bacon to a drip line tray and allow the bacon to cool.

Step 12 –Roughly chop the bacon.

Step 13 –Pour the egg mixture over the dough, then sprinkle with the chopped bacon.

Step 14 –Cook the breakfast bake until the eggs are set, about 25 minutes.

Step 15 –Top the breakfast bake with the green onions.

Step 16 –Allow the breakfast bake to cool slightly.

Step 17 –Serve.
