Ingredients

  • 4 teaspoons butter
  • 1 large onion, finely chopped
  • 1 large sweet red pepper, finely chopped
  • 4 cups frozen corn
  • 2 large eggs
  • 1 cup fat-free milk
  • 1 tablespoon sugar
  • 2 teaspoons hot pepper sauce
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/4 cups reduced-fat butter-flavored crackers, crushed
  • 5 green onions, sliced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Coat a 2-quart baking dish with cooking spray.

Step 3 –In a large skillet over medium-high skillet, heat the butter.

Step 4 –Add the onion and the red pepper to the butter and cook, while stirring, until they are tender.

Step 5 –Add the corn to the onion mixture and cook, stirring occasionally, until it is heated through.

Step 6 –Transfer the corn mixture from the heat.

Step 7 –In a small bowl, whisk the eggs, the milk, the sugar, the pepper sauce, the thyme, the salt, and the pepper together.

Step 8 –Add the egg mixture to the corn mixture.

Step 9 –Stir the crackers and the green onions into the corn mixture.

Step 10 –Transfer the corn mixture to the prepared baking dish and bake, uncovered, until a knife inserted in the center comes out clean, about 35-40 minutes.

Step 11 –Serve.
