New Year’s Breakfast Bites

Good morning! It’s the New Year, a time of fresh possibilities and beginnings! And that starts now, this morning with breakfast! No more of this boring toast routine! Now is the time for New Year’s Breakfast Bites! Each one is literally a bite of a full breakfast, starting with the runny egg on top and the potato home-fry beneath it, to the succulent and crispy bacon cup it all sits in! A dash of hot sauce keeps things exciting too, so you never need to trouble yourself with dull mornings this year! Make a resolution to whip up some New Year’s Breakfast Bites!

Ingredients

  • 12 strips bacon
  • 2 red potatoes, sliced 1/8-inch-thick, rounded ends discarded
  • 1 small red bell pepper, finely chopped
  • 12 large eggs
  • 2 tablespoons fresh chives, chopped
  • hot sauce, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Place a 12-cup muffin tin on a baking sheet.

Step 3 –Wrap 1 piece of the bacon around the inside of each cup of the muffin tin.

Step 4 –Place 1 slice of the potato on the bottom of each cup.

Step 5 –Divide the bell pepper pieces among the cups.

Step 6 –Bake until the fat starts to render from the bacon and the bacon begins to crisp and turn light brown on the top edges, about 10-12 minutes.

Step 7 –Transfer the muffin pan and baking sheet from the oven and crack an egg into each of the bacon cups.

Step 8 –Bake until the bacon is crisp, the egg whites are cooked through, and the yolks are still runny, about 10 minutes.

Step 9 –Run an offset spatula around the edges of the bites and transfer to a platter.

Step 10 –Sprinkle the bites with the chives and drizzle with the hot sauce.

Step 11 –Serve.
