Ingredients
- 3 chicken breasts, boneless and skinless
- 3 tablespoons butter, divided
- kosher salt, to taste
- freshly ground black pepper, to taste
- 2 tablespoons shallots, minced
- 1 clove garlic, pressed or minced
- 1 tablespoon all-purpose flour
- 3/4 cup whole milk
- 1 tablespoon whole grain mustard
- 1 cup extra sharp white cheddar cheese, grated
- 1/2 cup parmesan cheese, grated and divided
- cayenne pepper, to taste
- 1/3 cup panko breadcrumbs
- Italian flat-leaf parsley, optional, chopped, for garnish
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Grease a 9×13-inch baking dish.
Step 3 –Place the chicken breasts into the prepared baking dish.
Step 4 –Spread 1 tablespoon butter over the top of the chicken.
Step 5 –Season the chicken with salt and pepper.
Step 6 –Bake the chicken until the internal temperature is 155 degrees F, about 20 minutes.
Step 7 –As the chicken roasts, melt the remaining butter in a small saucepan over medium heat.
Step 8 –Add the shallots and garlic to the saucepan and sauté until the garlic is fragrant and the shallots have begun to soften, for about 2 minutes.
Step 9 –Add the flour and cook until the raw flour smell dissipates and a nutty fragrance begins to emerge, for about 2-3 minutes.
Step 10 –Slowly whisk in the milk while raising the heat to medium-high until the sauce thickens and slightly bubbles.
Step 11 –Stir in the mustard, cheddar cheese, and 1/4 cup parmesan cheese, whisking until the cheese is melted and smooth.
Step 12 –Season with cayenne and kosher salt.
Step 13 –Remove the chicken breasts from the oven and raise the oven temperature to 475 degrees F.
Step 14 –Pour the sauce over the chicken.
Step 15 –Sprinkle the chicken with the breadcrumbs and the remaining parmesan cheese.
Step 16 –Bake the chicken until it reaches 165 degrees F in its thickest part and the tops of the chicken and the sauce are golden brown, about 5-10 minutes.
Step 17 –Garnish the chicken with parsley and serve!
