Ingredients

  • 1/2 cup salted butter, divided
  • 1 (8-ounce) package sliced cremini mushrooms, roughly chopped
  • 1 large shallot, chopped
  • 6 tablespoons all-purpose flour
  • 4 cups whole milk
  • 4 ounces parmesan cheese, shredded
  • 2 teaspoons kosher salt
  • 1/2 teaspoon black pepper
  • 3 (15-ounce) packages frozen French-cut green beans, thawed and well-drained
  • 1 (8-ounce) can diced water chestnuts, drained
  • 1 cup crispy fried onions

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly grease a 13×9-inch baking dish.

Step 3 –In a Dutch oven over medium-high heat, melt 2 tablespoons of the butter.

Step 4 –Add the mushrooms and the shallots to the butter and cook, stirring often, until they are deeply browned and caramelized, about 8-10 minutes.

Step 5 –Transfer the veggie mixture to a plate and keep the juices in the Dutch oven.

Step 6 –Add the remaining butter to the juices and melt over medium-high heat.

Step 7 –Add the flour to the butter mixture and whisk constantly, about 1 minute.

Step 8 –Gradually add the milk into the flour mixture, whisking until smooth.

Step 9 –Cook the flour mixture, while whisking, until thickened and bubbly, about 4 minutes.

Step 10 –Transfer the sauce from the heat and whisk in the cheese, the salt, and the pepper until melted and smooth.

Step 11 –Stir the green beans, the mushroom mixture, and the water chestnuts into the sauce.

Step 12 –Spoon the casserole into the prepared baking dish.

Step 13 –Bake until bubbly around the edges, about 15 minutes.

Step 14 –Transfer from the oven and sprinkle with the fried onions.

Step 15 –Bake until the topping is golden brown, about 15 minutes.

Step 16 –Serve.
