Ingredients
For the simple syrup:
- 1 cup granulated sugar
- 1 cup water
For the drink:
- 3-4 fresh raspberries, plus more, to taste, for garnish
- 5-6 mint leaves, plus more, to taste, for garnish
- ice, to taste
- 1/4 cup raspberry juice or cranberry-raspberry juice
- 2 tablespoons fresh lime juice
- club soda or sparkling mineral water, to taste
- lime, cut into wedges, to taste, for garnish
Directions
Step 1 –In a medium sauce pan over medium heat, add the granulated sugar and the water, stirring frequently, and cook until the sugar is completely dissolved.
Step 2 –Transfer the simple syrup from the stovetop to a wire rack and let it cool.
Step 3 –After the simple syrup is cool, in a tall glass, add 3-4 of the raspberries, 5-6 of the mint leaves, and 2 tablespoons of the simple syrup. Using the back of a spoon, gently muddle the raspberry mixture until well-combined, making sure to keep mint leaves whole and intact.
Step 4 –Add the ice to the glass.
Step 5 –Add the raspberry juice and the lime juice, then fill the remaining portion of the glass with the club soda. Gently stir to combine.
Step 6 –Add the extra raspberries, the extra mint leaves, and the lime wedges to garnish the mojito and serve. Store the remaining simple syrup in an air-tight container in the refrigerator for up to one week.
