  • 1/4-1/3 cup all-purpose flour
  • 1 (3.5-4-pound) broiler/fryer chicken, cut up
  • 2 tablespoons canola oil
  • 2 1/3 cups water
  • 1 1/2 cups long-grain rice, uncooked
  • 1 cup 2% milk
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 1/2 teaspoon pepper
  • fresh parsley, to taste, minced


Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 13×9-inch baking dish.

Step 3 –Add the flour to a shallow bowl.

Step 4 –Dredge the chicken in the flour and coat on all sides, shaking off the excess.

Step 5 –In a large skillet over medium heat, heat the oil.

Step 6 –Add the chicken to the oil, in batches, and cook until it is browned.

Step 7 –In a large bowl, combine the water, the rice, the milk, the salt, the poultry seasoning, and the pepper.

Step 8 –Pour the rice mixture into the prepared baking dish.

Step 9 –Top the rice mixture with the browned chicken.

Step 10 –Cover the dish with foil and bake until the chicken juices run clear, about 50-55 minutes.

Step 11 –Sprinkle the casserole with the parsley.

Step 12 –Serve.
