Ingredients

  • 2 cups heavy whipping cream
  • 3 tablespoons powdered sugar
  • 2 teaspoons vanilla extract
  • 1 (9-ounce) package chocolate wafer cookies
  • 1/4 cup chocolate curls

Directions

Step 1 –In a large bowl, beat the heavy cream with a hand mixer on medium speed.

Step 2 –Once the cream begins to thicken, add the powdered sugar and the vanilla.

Step 3 –Continue to beat until the whipped cream thickens and stiff peaks form.

Step 4 –Spread a 1/2-inch layer of the whipped cream on each of the chocolate wafer cookies.

Step 5 –Spread a layer of the whipped cream on a serving plate.

Step 6 –Stack the cookies upright on the whipped cream layer to form a line.

Step 7 –Once all the cookies are in a line, spread the remaining whipped cream over the cookies to form a log-shaped cake.

Step 8 –Cover and refrigerate the cake until the moisture of the whipped cream softens the wafer cookies, at least 12 hours and up to overnight.

Step 9 –Decorate the top of the cake with the chocolate curls.

Step 10 –Slice the cake on a diagonal for a striped effect.
