It’s a loyal and beloved friend to home-cooks everywhere. And so, it’s the Old Yeller Casserole!
Ingredients
- 2 tablespoons vegetable oil
- 2 large onions, finely chopped
- 1 pound ground beef
- 2 (15-ounce) cans Boston-style baked beans
- 2 medium tomatoes, finely chopped
- 1/4 cup packed light brown sugar
- 1 tablespoon Dijon mustard
- 1 1/4 teaspoons salt
- 1/2 teaspoon freshly ground black pepper
- 5 slices bacon
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Coat a 2-quart casserole dish with cooking spray.
Step 3 –In a large skillet over medium heat, heat the oil.
Step 4 –Add the onion to the hot oil and cook until softened, about 5 minutes.
Step 5 –Add the beef and cook, while crumbling the meat, until completely browned, about 7-10 minutes.
Step 6 –In a large bowl, add the beef mixture along with the beans, the tomatoes, the brown sugar, the Dijon mustard, the salt, and the pepper, mixing well to combine.
Step 7 –Pour the beef mixture into the prepared casserole dish and arrange the bacon slices on top.
Step 8 –Cover the casserole dish with a lid or aluminum foil.
Step 9 –Bake until thick and bubbly, about 45 minutes.
Step 10 –Uncover the dish and preheat the broiler.
Step 11 –Broil until the bacon is crisp, about 1-2 minutes.
Step 12 –Serve.
