Ingredients
- 2 large onions, chopped
- 6 tablespoons olive oil
- 3 cloves garlic, minced
- 3 pounds plum tomatoes, seeded and chopped
- 1 cup vegetable or chicken broth
- 1 tablespoon dried basil
- 1 teaspoon crushed red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 (16-ounce) package penne pasta
- 1 (24-ounce) block Havarti cheese, cut into 1/2-inch cubes
- 1 cup Greek olives, pitted
- 1/3 cup parmesan cheese, grated

Directions
Step 1 –Grease a 9×13-inch baking dish.
Step 2 –In a Dutch oven over medium-high heat, sauté the onions in the oil until tender.
Step 3 –Add the garlic to the onions and cook until fragrant, about 1 minute.
Step 4 –Stir the tomatoes, the broth, the basil, the pepper flakes, the salt, and the pepper into the onions and bring to a boil.
Step 5 –Reduce the heat and simmer, covered, until the sauce slightly thickens, about 25-30 minutes.
Step 6 –Preheat the oven to 375 degrees F.
Step 7 –In a separate pot, cook the penne to al dente, according to the package instructions and drain.
Step 8 –Stir the Havarti cheese, the olives, and the cooked penne into the sauce.
Step 9 –Add the pasta mixture to the prepared baking dish.
Step 10 –Sprinkle the pasta with the parmesan cheese.
Step 11 –Cover and bake the pasta for 20 minutes.
Step 12 –Uncover and bake until the cheese is melted, about 5 minutes.
Step 13 –Serve.
