Ingredients
- 6 chicken breasts
- 24 ounces baby potatoes, cut into quarters
- olive oil, to taste, for drizzling
- 1 package ranch dressing mix
- black pepper, to taste
- 6 slices bacon, cooked and chopped
- 4 ounces cheddar cheese, grated
- chives or scallions, optional for garnish
Directions
Step 1 –Preheat the oven to 400 degrees F. Put a baking sheet in the oven to heat up.
Step 2 –Toss the potatoes in a large mixing bowl, with about 1/2 tablespoon of the olive oil and 1/2 of the ranch dressing mix.
Step 3 –Season the potatoes with black pepper and set them aside.
Step 4 –Drizzle the chicken breasts with the olive oil.
Step 5 –Garnish the chicken with the remaining 1/2 of the ranch dressing mix. Turn the chicken breasts to coat them evenly on each side.
Step 6 –Remove the hot sheet from your pre-heated oven.
Step 7 –Arrange the chicken breasts and potatoes on the prepared pan.
Step 8 –Bake until the chicken is cooked through and the potatoes are fully tender, about 20-25 minutes.
Step 9 –Remove the baking sheet and garnish each of the chicken breasts and the potatoes with the bacon and cheddar cheese.
Step 10 –Place the chicken back into the oven and roast until the cheese melts, about 5 minutes.
Step 11 –Sprinkle the chopped chives or scallions on top of the dish.
