Ingredients
- 2 tablespoons oil
- 1 1/2 pounds ground beef
- 4-5 cloves garlic, finely chopped
- 3 small bell peppers, diced
- 3 tablespoons taco seasoning
- 1 1/2 cups corn
- 15 ounces salsa
- 1 cup rice, uncooked
- 1 (15-ounce) can black beans, drained
- 4 cups cheddar cheese, shredded, divided
- 1 1/2 cups beef broth
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –In a skillet over medium heat, add the oil and the ground beef and cook, breaking the meat with a spatula, until it is no longer pink, about 5-7 minutes.
Step 3 –Add the garlic and the bell peppers to the beef and cook for 5 minutes.
Step 4 –Stir the taco seasoning into the beef mixture and cook until it has thickened, about 2 minutes.
Step 5 –Add the corn, the salsa, the rice, the black beans, 1 cup of the cheese, and the beef broth to the beef mixture and combine well.
Step 6 –Top the beef mixture with the remaining cheese and bake, covered, until the rice is cooked, about 25-30 minutes.
Step 7 –Uncover the casserole and bake until the cheese is melty all over, about 5-10 minutes.
Step 8 –Serve.
