Ingredients

  • 1 pound smoked turkey sausage, cut into rounds
  • 1 large onion, peeled and chopped
  • 3 medium russet potatoes
  • 1 tablespoon olive oil
  • 1/2 teaspoon fine sea salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 teaspoon sweet paprika

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a large baking sheet with foil, then coat it with cooking spray.

Step 3 –Add the sausage rounds, the onions, and the potatoes into a large bowl.

Step 4 –Drizzle the sausage-vegetable mixture with the olive oil and season with the salt, the pepper, and the paprika. Toss together until all of the seasoning is evenly distributed.

Step 5 –Evenly spread the sausage mixture onto the prepared sheet pan.

Step 6 –Roast the sausage mixture, stirring every 15 minutes, until the potatoes are golden-brown and tender, 45 minutes-1 hour.

Step 7 –Serve.
