Ingredients
- 6 cups frozen potato tots, divided
- 3 tablespoons vegetable oil, divided
- 1 small yellow onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- kosher salt, to taste
- freshly ground black pepper, to taste
- 1/2 pound deli-sliced corned beef, cut into 1/2-inch pieces
- 8 large eggs
- 1 1/2 cups whole milk
- 3/4 teaspoon dry mustard
- hot sauce, to taste
- 1 1/2 cups cheddar cheese, shredded
Directions
Step 1 –Preheat the oven to 450 degrees F.
Step 2 –Grease a 9×13-inch baking dish with oil.
Step 3 –Fill the bottom of the prepared dish with 4 cups of the tots, in a single layer.
Step 4 –Drizzle the tots with 1 tablespoon of the oil and bake until they are hot and crispy, about 20 minutes.
Step 5 –Let the tots cool for 15 minutes.
Step 6 –Reduce the oven temperature to 350 degrees F.
Step 7 –Heat the remaining oil in a large skillet over medium-high heat.
Step 8 –Add the onions, the red peppers, the green peppers, the salt, and the black pepper to the oil and cook, stirring occasionally, until the vegetables have softened and start to brown, about 6 minutes.
Step 9 –Add the corned beef to the veggies and cook for 2 minutes.
Step 10 –Let the corned beef mixture cool.
Step 11 –Whisk the eggs, the milk, the mustard, the hot sauce, the salt, and the ground black pepper together in a large bowl.
Step 12 –Sprinkle 1/2 cup of the cheddar over the cooked tots.
Step 13 –Layer the corned beef mixture over the cheddar.
Step 14 –Pour the egg mixture over the corned beef mixture and top with the remaining cheddar.
Step 15 –Top the cheddar with the remaining tots.
Step 16 –Bake the casserole until the egg mixture is set and the top is lightly golden-brown, about 50 minutes-1 hour.
Step 17 –Let the casserole cool for 15 minutes.
Step 18 –Serve.
