They’re very tender and topped with rich parmesan cheese, crunchy panko breadcrumbs, and have a lovely garlic flavor in every bite. You don’t need glasses to see just how delicious these Parmesan Roasted Carrots are! You’ll surely give them a 20 out of 20!

Ingredients
- 2 pounds carrots, washed and halved
- 1/4 cup olive oil
- 4 large cloves garlic, minced
- 1/4 cup parmesan cheese, grated
- 2 tablespoons panko breadcrumbs
- salt, to taste
- pepper, to taste
- fresh parsley, optional, to taste, chopped

Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Lightly grease a baking sheet with cooking oil spray.
Step 3 –Arrange the carrots on the prepared baking sheet.
Step 4 –Add the olive oil, the garlic, the parmesan, the breadcrumbs, the salt, and the pepper over the carrots and toss to coat.
Step 5 –Spread the carrots out and bake, tossing halfway through, until they are tender, about 20-25 minutes.
Step 6 –Transfer the carrots from the oven and top with the fresh parsley.
Step 7 –Serve.
