Peanut Butter Stir-Fry shows exactly why peanut butter deserves to be mixed into your Asian-inspired dishes! The richness, the nuttiness, and creaminess of the peanut butter is a welcome and delicious complement to savory soy sauce, tropical lime juice, and the spice of ginger and chili flakes. Pour the sauce over some tender rice noodles and a few fresh vegetables and you’ll really have a meal to go nuts over! Nothing matches the speed (20 minutes or less!) or the flavor of Peanut Butter Stir-Fry!

For the peanut butter stir-fry sauce:

  • 1/4 cup peanut butter, crunchy or smooth
  • 2 tablespoons dark soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons sesame oil
  • 1 teaspoon garlic, grated or minced
  • 1 teaspoon ginger, grated or minced
  • 1 tablespoon brown sugar
  • chili flakes, optional, to taste
  • 2-3 tablespoons water

For the stir-fry:

  • 3.5 ounces dried noodles, preferably rice noodles
  • 1 tablespoon vegetable or peanut oil
  • 1 large carrot, sliced into matchsticks
  • 3.5 ounces mushrooms, sliced
  • 1 large pepper, sliced
  • 3-4 green onions, sliced into 1-inch chunks with the whites and the greens divided

For the garnish:

  • peanuts, crushed, optionally toasted
  • sesame seeds, optionally toasted


Step 1 –In a small mixing bowl, combine the peanut butter, the soy sauce, the lime juice, the sesame oil, the garlic, the ginger, the sugar, and the chili flakes. Keep whisking until it comes together.

Step 2 –Whisk in the water to smooth the sauce out.

Step 3 –Prepare the noodles according to package directions. Drain the noodles when cooked.

Step 4 –Heat 1 tablespoon of the oil in a wok or a skillet over high heat.

Step 5 –Add in the carrots and fry until they just begin to pick up color, about 3 minutes.

Step 6 –Add in the mushrooms, the pepper, and the firm, white parts of the green onions.

Step 7 –Fry until the veggies start to brown and begin to soften slightly, shaking the pan frequently, about 3-4 minutes.

Step 8 –Turn the heat to medium.

Step 9 –Add in the cooked noodles, the peanut sauce, and the green parts of the green onions, tossing evenly to coat everything.

Step 10 –Serve with the crushed peanuts and the sesame seeds.
