- 1/2 cup granulated sugar
- 1/2 cup water
- 1/4 cup vanilla syrup
For the cocktail:
- pear juice, to taste
- granulated sugar, to taste
- 6 ounces gin
- 3 cups soda water
- ice, to taste, crushed
- vanilla bean powder, to taste, for garnish
Directions
Step 1 –In medium saucepan over medium heat, add 1 cup of the chopped pears, 1/2 cup of the granulated sugar, the water, and the vanilla syrup and bring to a boil, stirring frequently.
Step 2 –Reduce the heat to medium-low and cook the syrup until it becomes amber in color and the pears have broken down, about 5-8 minutes.
Step 3 –Transfer the saucepan from the heat and strain the syrup into a small pitcher, using a spoon to press any of the remaining liquid out of the pear solids. Discard the solids or save for another use.
Step 4 –Let the pear-vanilla syrup cool to room temperature.
Step 5 –In a small, shallow bowl, add the pear juice.
Step 6 –In a second small, shallow bowl, add the remaining granulated sugar.
Step 7 –Individually dip the rims of four cocktail glasses into the pear juice, then into the sugar.
Step 8 –Let the glasses sit until the coated rims are firm, about 5 minutes.
Step 9 –Add 1 1/2 ounces of the gin and 2 tablespoons of the pear-vanilla syrup to each of the prepared glasses and whisk or stir to combine.
Step 10 –Top each of the gin mixtures with 3/4 cup of the soda water and the ice and stir to combine.
Step 11 –Serve the drinks garnished with the extra pear slices and the vanilla powder.
