Ingredients
- 1 pound bulk Italian sausage
- 1 (14.5-ounce) can of diced tomatoes with basil, oregano, and garlic
- 1 (15.5-ounce) can of cannellini beans, rinsed and drained
- 1 1/2 cups water
- 1 1/2 cups instant rice, uncooked
- 1/4 cup parmesan cheese, grated, plus more for garnish, if desired
- 1/2 cup mini pepperonis, sliced
- fresh basil, optional, chopped, to taste
Directions
Step 1 –In a large skillet over medium heat, cook the sausage, breaking into crumbles and cooking until no longer pink, about 5-7 minutes.
Step 2 –Drain the excess grease from the skillet.
Step 3 –Add the diced tomatoes, cannellini beans, water, and rice to the sausage.
Step 4 –Return the skillet to the heat and bring the sausage mixture to a boil.
Step 5 –Cover the skillet and transfer away from the heat. Let it stand for 5 minutes.
Step 6 –Fluff the sausage mixture with a fork; stir in the 1/4 cup cheese.
Step 7 –Top the cheesy-sausage mixture with the pepperonis, additional cheese, and basil.
Step 8 –Serve.
