  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 (28-ounce) can petite diced tomatoes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces cream cheese, cut into chunks
  • 19 ounces frozen cheese tortellini
  • 2 cups fresh spinach, roughly chopped
  • 1/4 cup parmesan cheese, grated


Step 1 –In a large skillet over medium heat, add the garlic and the olive oil and cook until just fragrant, about 1 minute.

Step 2 –Add the tomatoes with their juices, the basil, the oregano, and the black pepper to the garlic and cook, stirring constantly, until the tomatoes are hot.

Step 3 –Add the cream cheese to the tomato mixture and cook, stirring constantly, until it has melted and creates a smooth, creamy sauce. Whisk to fully incorporate the cream cheese, if needed.

Step 4 –While the sauce is cooking, in a large pot of salted, boiling water, cook the tortellini to al dente, according to the package directions. Drain the pasta.

Step 5 –Add the spinach to the sauce mixture and cook, while stirring, until wilted.

Step 6 –Add the cooked tortellini to the sauce mixture and stir to combine.

Step 7 –Sprinkle the parmesan cheese over the tortellini mixture and stir to combine.

Step 8 –Serve.
