Pop’s Creamy Chicken

Growing up, our parents would take turns cooking dinner each week. When it was mom’s turn, we could definitely count on there being lots of healthy, green-filled options. On the other hand, when it was dad’s turn, we always knew we were in for a real savory treat. Pop’s Creamy Chicken made a frequent appearance on his menu, and we loved it. We didn’t realize how easy it was for him to make the juicy chicken, all covered with a special creamy, buttery, and slightly spicy sauce. It was then, and is still now, just so tasty! Whip up Pop’s Creamy Chicken in your own kitchen and we’re sure you’ll feel the same!

Step 6 –Transfer the skillet from the heat and add the broth, the lime juice, the onion, 1 tablespoon of the cilantro, and the red pepper flakes.

Step 7 –Return the skillet to the heat and bring the sauce mixture to a boil, while stirring, to loosen any of the browned bits from the bottom of the pan.

Step 8 –Gently boil the sauce mixture, uncovered, until it has reduced to about 1/4 cup, about 10 minutes.

Step 9 –Reduce the heat to medium-low. Add the heavy cream and the butter to the sauce and stir until the butter has melted.

Step 10 –Add the chicken breasts to the sauce.

Step 11 –Transfer the skillet to the oven and bake the chicken mixture until the meat reaches an internal temperature of 165 degrees F and the juices run clear, about 5-10 minutes.

Step 12 –Transfer the skillet to a wire rack and spoon the sauce over the chicken breasts.

Step 13 –Serve the chicken breasts covered in the sauce from the skillet, garnished with the extra cilantro and the lime wedges.
