Ingredients
- 1/4 cup butter, divided
- 2 pounds pork chops, boneless
- 1/2 teaspoon paprika
- kosher salt, to taste
- ground black pepper, to taste
- 1 (8 ounce) package sliced fresh mushrooms
- 4 cloves garlic, minced
- 1 teaspoon Dijon mustard
- 2 tablespoons all-purpose flour
- 2 cups beef broth
Directions
Step 1 –Heat a large cast-iron skillet over medium-high heat.
Step 2 –Add 2 tablespoons of the butter.
Step 3 –Season both sides of the pork chops with paprika, salt, and pepper.
Step 4 –Place the pork chops into the skillet and sear until golden brown on both sides and no longer pink in the center, about 2-4 minutes per side.
Step 5 –Remove the pork chops from the skillet onto a plate lined with paper towels and set them aside.
Step 6 –Add the remaining butter to the same skillet over medium-high heat.
Step 7 –When the butter is melted, add the mushrooms to the skillet and cook until they are golden and most of the excess moisture has evaporated, about 5 minutes.
Step 8 –Add the garlic and mustard to the skillet and cook until the garlic is fragrant, about 1 minute.
Step 9 –Add the flour to the skillet and stir until no lumps remain.
Step 10 –Slowly add the beef broth, whisking until well incorporated.
Step 11 –Season with salt and pepper.
Step 12 –Reduce the heat to medium so that the sauce is just simmering.
Step 13 –Cook, stirring often, until the sauce thickens, about 5 minutes.
Step 14 –Taste for seasoning.
Step 15 –Place the pork chops back in the skillet and coat with the sauce.
Step 16 –Cook until the pork chops are heated through, about 1 minute.
Step 17 –Serve!
