Ingredients
For the juice mixture:
- 1/2 teaspoon orange zest
- 2/3 cup orange juice
- 1/2 teaspoon lemon zest
- 1/3 cup lemon juice
- 1/3 cup light brown sugar, packed
- 1 cinnamon stick
For the fruit salad:
- 2 cups fresh pineapple, cubed
- 2 cups fresh strawberries, sliced
- 2 medium kiwis, peeled and sliced
- 3 medium bananas, sliced
- 2 medium oranges, peeled and segmented
- 1 medium red grapefruit, peeled and segmented
- 1 cup red seedless grapes
Directions
Step 1 –In a medium saucepan over medium-high heat, add the orange zest, the orange juice, the lemon zest, the lemon juice, the light brown sugar, and the cinnamon stick, stirring to combine.
Step 2 –Bring the mixture to a boil, uncovered.
Step 3 –Reduce the stovetop heat to medium-low and simmer the mixture until the flavors meld together, about 5 minutes.
Step 4 –Transfer the saucepan from the stovetop to a wire rack and let it cool completely, about 30 minutes.
Step 5 –Remove and discard the cinnamon stick.
Step 6 –In a large, deep, glass serving bowl, evenly layer the pineapple, the strawberries, the kiwis, the bananas, the oranges, the red grapefruit, and the grapes.
Step 7 –Evenly pour the juice mixture over the fruit layers.
Step 8 –Tightly cover the fruit salad and chill in the refrigerator for at least 4 hours and up to overnight.
Step 9 –Serve.
