Ingredients

  • 8-10 large lemons (should equal about 2 cups)
  • 8 cups filtered cold water, divided
  • 2 cups granulated sugar
  • pure beet juice (not from concentrate), to taste
  • fresh mint leaves, to taste, for garnish
  • lemon slices, to taste, for garnish

Directions

Step 1 –Juice the lemons through a strainer into a medium bowl to remove the pulp and seeds.

Step 2 –In a pot over medium-high heat, add 2 cups of the water and the sugar and heat, while stirring, until the sugar dissolves.

Step 3 –Pour the simple syrup into a pitcher.

Step 4 –Add the lemon juice to the simple syrup and stir to combine.

Step 5 –Slowly add the remaining water to the lemon mixture, tasting occasionally until the desired sweetness level is reached.

Step 6 –Slowly stir the beet juice, one drop at a time, into the lemonade until the desired shade of pink is reached. The pure beet juice in this small amount is tasteless, so it is only used to add color.

Step 7 –Refrigerate the lemonade until thoroughly chilled, about 1 hour.

Step 8 –Pour the lemonade into glasses and garnish with the mint leaves and the lemon slices.

Step 9 –Serve.
