Ingredients
- 2 tablespoons olive oil, divided
- 1/2 cup onion, diced
- 4 cloves garlic, minced
- 1/2 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 1 (14 ounce) can diced tomatoes, juices reserved
- 1/3 cup water
- 1/4 cup chicken broth
- 1 teaspoon sugar
- 9 ounces cheese tortellini
- parmesan cheese, optional, for garnish
- basil, optional, for garnish
- parsley, optional, for garnish
Directions
Step 1 –In a large saucepan, add 1 tablespoon of the olive oil and heat over medium heat.
Step 2 –Add the onion, and cook until it is soft and translucent, about 5-7 minutes.
Step 3 –Add in the garlic, basil, and oregano, stirring until the mixture is fragrant, about 1 minute.
Step 4 –Add in the tomatoes with their juices, water, broth, and sugar, using a spoon to mash the tomatoes lightly.
Step 5 –Bring the mixture to a boil, and reduce the heat to a simmer.
Step 6 –Allow the sauce to simmer until thickened, about 10 minutes.
Step 7 –Cook the tortellini according to package directions until al dente.
Step 8 –Drain the tortellini and add it to the tomato sauce.
Step 9 –Add in the remaining 1 tablespoon of the olive oil and taste for seasoning.
Step 10 –Sprinkle the top with parmesan and some fresh parsley or basil.
Step 11 –Serve.
