Ingredients

  • 10 bacon strips, diced
  • 1 large onion, chopped
  • 1 cup carrots, diced
  • 3 tablespoons all-purpose flour
  • 3 cups whole milk
  • 1 1/2 cups water
  • 2 1/2 cups potatoes, cubed
  • 1 (15.25 ounce) can whole kernel corn, drained
  • 2 teaspoons chicken bouillon granules
  • pepper, to taste
  • 3 cups cheddar cheese, shredded
  • 2 cups ham, cubed and fully cooked

Directions

Step 1 –In a Dutch oven, cook the bacon over medium heat until crisp, about 5 minutes.

Step 2 –Using a slotted spoon, transfer the bacon to paper towels to drain.

Step 3 –In the bacon drippings in the Dutch oven over medium heat, sauté the onion and the carrots until tender, about 5 minutes.

Step 4 –Stir in the flour until blended.

Step 5 –Gradually add the milk and the water.

Step 6 –Bring the mixture to a boil and cook, stirring, until thickened, about 2 minutes.

Step 7 –Add the potatoes, the corn, the bouillon, and the pepper.

Step 8 –Reduce the heat to low and simmer, uncovered, until the potatoes are tender, about 20 minutes.

Step 9 –Add the cheese and the ham and heat until the cheese is melted.
