Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 cup white sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 3/4 cup raspberry jam

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 8-inch square cake pan.

Step 3 –In a large bowl, combine the flour, the sugar, the butter, and the egg and beat with an electric mixer until the mixture resembles coarse crumbs.

Step 4 –Measure 2 cups of the crumb mixture and set aside. Press the remaining crumb mixture firmly into the bottom of the prepared pan.

Step 5 –Spread the jam over the crumb mixture to within 1/2 inch of the edges of the pan, and then sprinkle with the reserved crumb mixture.

Step 6 –Bake the crumble until it is lightly golden-brown, about 40-50 minutes.

Step 7 –Transfer the crumble to a wire rack and cool completely.

Step 8 –Cut the crumble into 25 squares.

Step 9 –Serve.
