Ingredients
For the salad:
- 1/2 pound chicken breasts, boneless and skinless
- 6 cups spring mix
- 1 cup fresh blackberries
- 1 medium avocado, sliced
- 1/4 cup red onion, sliced
- 1/4 cup walnuts, chopped
For the dressing:
- 1/2 cup fresh blackberries
- 2 teaspoons Dijon mustard
- 2 tablespoons balsamic vinegar
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons honey
- 1 teaspoon soy sauce
- salt, to taste
- black pepper, to taste
Directions
Step 1 –In a large cast-iron skillet over medium-high heat, add the chicken breasts and sauté until the chicken reaches an internal temperature of 165 degrees F and the juices run clear, about 4-5 minutes per side.
Step 2 –Place the cooked chicken breasts on a plate and tent them with aluminum foil to keep them warm.
Step 3 –In a large bowl, add the spring mix and arrange 1 cup of the blackberries, the avocado, the red onion, and the walnuts on top.
Step 4 –In a medium bowl, add the remaining blackberries, the Dijon mustard, the balsamic vinegar, the olive oil, the honey, and the soy sauce and, with a fork, mash the blackberries to release the juices.
Step 5 –Whisk the dressing mixture to combine.
Step 6 –Add the salt and the black pepper to the dressing mixture and whisk to combine.
Step 7 –On a cutting board with a sharp knife, add the cooked chicken breasts and slice.
Step 8 –Add the chicken on top of the salad.
Step 9 –Serve the salad drizzled with the dressing.
