Roasted Cabbage & Carrots

Ingredients

For the cabbage:

  • 1 medium head green cabbage, sliced into 6 1/4-inch-thick rounds
  • olive or avocado oil cooking spray, to taste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • pepper, to taste
  • 1/8 teaspoon red pepper flakes, optional

For the carrots:

  • 3 cups carrots, sliced on the diagonal
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 2 teaspoons olive oil
  • 1/2 teaspoon kosher salt
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 425 degrees F.

Step 2 –Line an extra-large sheet pan with parchment paper, then generously coat it with cooking spray.

Step 3 –Place the cabbage slices on the prepared pan and spray liberally with the olive oil cooking spray and season with the oregano, 1/2 teaspoon of the salt, the pepper, and the red pepper flakes.

Step 4 –Place the carrot slices next to the cabbage slices and top with the paprika, the garlic powder, the olive oil, the remaining salt, and the pepper. Toss to coat.

Step 5 –Transfer the veggies to the oven and roast, tossing the carrots halfway through, until they are crisp, about 35-40 minutes.

Step 6 –Serve.
