If you are craving some family time, this familiar favorite will have everyone running to the table. Roasted Chicken Supper is a one-pot wonder that will satisfy that homestyle, homecooked, come-home-and-sit-for-awhile feeling. Easy yet elegant, a whole chicken is seasoned inside and out, with some red potatoes joining in on the family fun and baked until golden. Roasted Chicken Supper is the perfect backdrop to bring all the family stories back to life!

Ingredients

  • 1 (3-pound) broiler or fryer chicken
  • 1/2 teaspoon dried thyme
  • 2 teaspoons salt, divided
  • 1 large onion, cut into 8 wedges
  • 2 celery ribs with leaves, cut into 4-inch pieces
  • 4 fresh parsley sprigs
  • 8 small red potatoes
  • 1/4 cup chicken broth
  • parsley, optional, to taste, chopped, for garnish
  • fresh rosemary sprigs, optional, to taste, for garnish

Directions

Step 1 –Preheat the oven to 375 degrees F.

Step 2 –Grease a large Dutch oven.

Step 3 –On a large platter, add the chicken and season the inside of the chicken cavity with the thyme and 1 teaspoon of the salt.

Step 4 –Add the onion, the celery, and the parsley sprigs inside the cavity of the chicken.

Step 5 –Transfer the chicken to the prepared Dutch oven.

Step 6 –Cover the Dutch oven and bake for 30 minutes.

Step 7 –Evenly sprinkle the remaining salt over the top of the chicken.

Step 8 –Add the potatoes and the chicken broth to the Dutch oven.

Step 9 –Transfer the uncovered Dutch oven back to the oven and bake for 25 minutes.

Step 10 –Increase the oven temperature to 400 degrees F.

Step 11 –Bake until the potatoes are tender and the chicken reaches an internal temperature of 170-175 degrees F, about 10-15 minutes.

Step 12 –Transfer the Dutch oven from the oven to a wire rack and cover it with aluminum foil.

Step 13 –Let the chicken supper rest, about 15 minutes

Step 14 –Transfer the chicken to a platter, or alternatively, transfer to a cutting board and carve it into serving-size slices.

Step 15 –Serve the chicken and the potatoes garnished with the chopped parsley and the rosemary sprigs.
