Ingredients

  • 1 pint grape tomatoes
  • 1 pound honey gold potatoes, quartered
  • 1 red bell pepper, chopped lengthwise into 1-inch pieces
  • 1 orange bell pepper, chopped lengthwise into 1-inch pieces
  • 1 red onion, quartered
  • 3 cloves garlic, smashed
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon dried Italian seasoning
  • 10 Italian sausage links

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a 9×11-inch glass baking dish, add the tomatoes, the potatoes, the red bell peppers, the orange bell peppers, the red onion, the garlic, and the olive oil and toss to combine.

Step 3 –Add the salt, the pepper, and the Italian seasoning to the tomato mixture and mix well.

Step 4 –Place the sausage links on top of the tomato mixture.

Step 5 –Cover the baking dish with foil and bake the sausage mixture for 1 hour.

Step 6 –Discard the foil, stir the sausage mixture, and bake until the sausage is golden-brown, about 30 minutes.

Step 7 –Serve.
