Ingredients

  • 3 cloves garlic, minced
  • 1 tablespoon dried rosemary
  • salt, to taste
  • pepper, to taste
  • 2 pounds pork loin roast, boneless
  • 1/4 cup olive oil
  • 1/2 cup white wine

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Crush the garlic with the rosemary, the salt, and the pepper in a mortar and pestle until a paste forms.

Step 3 –Pierce the pork with a sharp knife in several places and press the garlic paste into the openings.

Step 4 –Rub the pork with the remaining garlic mixture and the olive oil.

Step 5 –Place the pork in an oven-safe pan and bake, turning and basting with the pan liquids every 30 minutes, until it reaches an internal temperature of 145 degrees F, about 1 hour 30 minutes-2 hours.

Step 6 –Transfer the pork to a platter and keep it warm.

Step 7 –Place the same pan onto the stovetop over medium-high heat.

Step 8 –Add the wine to the pan and stir to loosen the browned bits from the bottom, then simmer, about 3-5 minutes.

Step 9 –Slice the pork.

Step 10 –Serve the pork topped with the pan sauce.
