Ingredients
- 2 tablespoons butter
- 2 pounds lean ground beef
- 2 cups onions, diced
- 2 cloves garlic, chopped
- 1 1/2 cups carrots, sliced
- 2 cups celery, sliced
- 1 cup green bell pepper, diced
- 3 quarts beef broth
- 16 ounces tomatoes, chopped
- 1/4 teaspoon ground black pepper
- 10 ounces hominy
Directions
Step 1 –In a large pot over medium heat, melt the butter.
Step 2 –Add the beef to the butter and cook, while crumbling the meat, until it is no longer pink, about 5-7 minutes.
Step 3 –Add the onions, the garlic, the carrots, the celery, and the green bell pepper to the beef and simmer, covered, for 10 minutes.
Step 4 –Add the beef broth, the chopped tomatoes, and the black pepper to the beef mixture and simmer over low heat for 35 minutes.
Step 5 –Add the hominy to the soup mixture and boil for 10 minutes.
Step 6 –Serve.
