Rosie’s Meatloaf

Rosie is a funny ole gal. She loves her routines and rhythms and very rarely branches out when it comes to food. Usually, roast and carrots will do but when the occasional wild hair pops up, it’s meatloaf for her… but only Rosie’s Meatloaf, that is. She loves this version because it’s very easy to make and it’s loaded with juicy, oniony, and beefy flavors, which are all things delicious yet not too daring. She’s simple like that, but that’s why we love her. Ingredients

  • 1 large egg, lightly beaten
  • 1/3 cup evaporated milk
  • 2 tablespoons Worcestershire sauce
  • 3/4 cup quick-cooking oats
  • 1/4 cup onion, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon rubbed sage
  • 1/8 teaspoon pepper
  • 1 1/2 pounds ground beef
  • 1/4 cup ketchup

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a large bowl, combine the egg, the milk, the Worcestershire sauce, the oats, the onion, the salt, the sage, and the pepper.

Step 3 –Crumble the beef over the egg mixture and mix well to combine.

Step 4 –Press the beef mixture into an ungreased 8×4-inch loaf pan.

Step 5 –Bake the meatloaf, uncovered, for 1 hour.

Step 6 –Drain the excess grease from the meatloaf.

Step 7 –Spread the ketchup over the meatloaf and bake until the meat is no longer pink and a thermometer inserted into the center reads at least 160 degrees F, about 10 minutes.

Step 8 –Allow the meatloaf to stand for 10 minutes before slicing.

Step 9 –Serve.
