- 3/4 cup water
- 2 tablespoons cornstarch
- 1/3 cup sugar
- 1/2 teaspoon cinnamon
- 1 1/2 teaspoons lemon juice
- 2 Granny Smith apples, peeled and cored, diced
For the ring:
- 1 (8-ounce) package cream cheese, room temperature
- 1/3 cup sugar
- 1 egg yolk
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 2 (8-ounce) cans refrigerated crescent dinner rolls
For the caramel drizzle:
- 6 tablespoons butter
- 1/2 cup brown sugar
- 1/8 cup milk
- 1 teaspoon vanilla extract
For the glaze drizzle:
- 1 cup powdered sugar, plus more, to taste
- 2 tablespoons milk, plus more, to taste
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –In a medium saucepan over low heat, add the water, the cornstarch, 1/3 cup of the sugar, the cinnamon, and 1 1/2 teaspoons of the lemon juice and bring to a boil, stirring constantly.
Step 3 –Cook the cinnamon mixture, while stirring, until the sauce thickens, about 3-4 minutes.
Step 4 –Add the apples to the cinnamon mixture, stir, and simmer, about 8-10 minutes.
Step 5 –Transfer the apple filling from the heat and let cool.
Step 6 –In a medium mixing bowl, beat the cream cheese until it is fluffy, about 2-3 minutes.
Step 7 –Add the remaining sugar, the egg yolk, the remaining lemon juice, and 1 teaspoon of the vanilla to the cream cheese and beat for 2 minutes. Set it aside.
Step 8 –Unroll the crescent rolls and separate them into their perforated triangles.
Step 9 –Place the dough triangles on an ungreased baking sheet, placing the wider ends in the center to form a circle with a 5-inch opening and the smaller tips on the outside. It is okay for the wider ends to overlap.
Step 10 –Spread the cream cheese mixture over the wide parts of the crescents.
Step 11 –Spoon the apple filling on top of the cream cheese mixture.
Step 12 –Fold the small tips of the crescents over the apple filling and tuck the wider parts under to secure and form the ring.
Step 13 –Bake the crescent ring for 20 minutes.
Step 14 –Let the crescent ring cool for 5 minutes.
Step 15 –In a small heavy-bottomed pan over low heat, melt the butter.
Step 16 –Stir the brown sugar and 1/8 cup of the milk into the melted butter and bring to a boil.
Step 17 –Stir the brown sugar mixture constantly until it’s thin enough to drizzle, about 8-12 minutes.
Step 18 –Transfer the brown sugar mixture from the heat and add the remaining vanilla.
Step 19 –Stir the caramel drizzle and let it cool slightly.
Step 20 –Drizzle the slightly cooled caramel drizzle over the cooled crescent ring.
Step 21 –In a 1-cup measuring cup, add 1 cup of the powdered sugar and the remaining 2 tablespoons of the milk and stir until combined and it is thin enough to drizzle. Add more of the extra powdered sugar or the extra milk, as needed, to reach the desired consistency.
Step 22 –Drizzle the glaze over the cooled crescent ring.
Step 23 –Cut the crescent ring into pieces and serve.
