Ingredients
- 1 (2 1/2-pound) king salmon fillet, skinned and deboned
- 1 cup dry breadcrumbs
- 1/2 cup red onion, minced
- 1 tablespoon Dijon mustard
- 2 teaspoons horseradish
- 2 eggs, lightly beaten
- 1 tablespoon fresh rosemary, minced
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 2 tablespoons olive oil
- buns, optional, to taste, for serving
- toppings, optional, of your choice, to taste, for serving
Directions
Step 1 –Place the salmon on a cutting board and chop the fish until it is in small pieces.
Step 2 –In a large mixing bowl, combine the salmon with the breadcrumbs, the red onions, the Dijon mustard, the horseradish, and the eggs.
Step 3 –Season with the rosemary, the salt, and the pepper.
Step 4 –Cover and cool in the refrigerator for 20-30 minutes.
Step 5 –Preheat the grill to medium-high heat.
Step 6 –Shape the salmon mixture into 8 patties and lightly brush with them the olive oil.
Step 7 –Grill the salmon patties on the grill until they reach at least 125 degrees F for medium doneness when a meat thermometer is inserted into the thickest part, about 4-5 minutes per side.
Step 8 –Serve immediately on the buns with the desired burger toppings.
