The Salsa Chicken Dump is a tasty Tex-Mex-inspired dish that’s truly tender and tremendous! The chicken is melt-in-your-mouth tender, infused with vibrant salsa, fragrant cilantro, fresh garlic, and spicy chili powder. It’s ready for a bed of rice or some warm tortillas to complete this delicious dinner experience! It’s Salsa Chicken Dump all the way!

Ingredients
- 2 pounds chicken thighs, boneless and skinless, trimmed
- salt, to taste
- pepper, to taste
- 1 cup jarred salsa
- juice of 1 lime
- 1/4 cup cilantro, chopped
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1 tablespoon honey
- 3 cloves garlic, minced
- cooked rice or tortillas, optional, to taste, warm, for serving

Directions
Step 1 –Spray a slow cooker with cooking spray.
Step 2 –Season the chicken thighs with the salt and the pepper.
Step 3 –Place the chicken thighs in the slow cooker.
Step 4 –In a large bowl, mix the salsa, the lime juice, the cilantro, the chili powder, the cumin, the honey, and the garlic together.
Step 5 –Pour the salsa mixture over the chicken thighs and turn to coat them.
Step 6 –Cover and cook on low heat until the chicken thighs are fall-apart tender, about 3-5 hours.
Step 7 –Turn the slow cooker’s “warm” feature on.
Step 8 –Shred the chicken thighs using two forks.
Step 9 –Serve the chicken over the rice or with the tortillas.
