  • 1 pound ground hot sausage
  • 1 1/2 cups rice
  • 1 (1-ounce) envelope dry onion soup mix
  • 3 cups water
  • 1/2 cup celery, chopped
  • 1/2 cup green bell pepper, chopped
  • 1 cup onion, chopped
  • 4 ounces canned mushrooms, drained
  • 1/2 cup butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground pepper
  • 1 cup cheddar cheese, shredded

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Cook the sausage in a pan over medium-high heat until it is no longer pink, about 5-8 minutes.

Step 3 –Drain the fat from the pan.

Step 4 –Place the rice in a 3-quart casserole dish.

Step 5 –Add the soup mix and the water to the rice and stir to combine.

Step 6 –Add the celery, the green pepper, the onion, the mushrooms, the butter, the cooked sausage, the salt, and the pepper.

Step 7 –Bake until most of the liquid is absorbed, about 40 minutes.
