Yes, that prolific summer squash has returned to lend moisture to another delicious baked good without disrupting or intruding on the flavor… in this case, the fudgy, chocolatey flavor of classic brownies. Melted chocolate is baked into every bite of Secret Brownies. Yes, this certainly makes use of zucchini in the best, most dessert-tastic way!
Ingredients
- 1 1/2 cups granulated sugar
- 1/2 cup canola oil or vegetable oil
- 2 cups all-purpose flour
- 1/4 cup unsweetened cocoa
- 2 cups zucchini, shredded
- 2 teaspoons vanilla extract
- 1 teaspoon salt
- 1 1/2 teaspoons baking soda
- 1 1/4 cups semi-sweet chocolate chips, divided
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 9×13-inch baking pan with cooking spray.
Step 3 –In a stand mixer, combine the sugar, the oil, and the flour until the mixture resembles wet sand.
Step 4 –While mixing on low, add the cocoa, the shredded zucchini, the vanilla extract, the salt, and the baking soda and mix until well-combined.
Step 5 –Stir in 1 cup of the chocolate chips.
Step 6 –Pour the brownie batter into the prepared pan and sprinkle it with the remaining chocolate chips.
Step 7 –Bake until a toothpick inserted into the center comes out clean and the brownies are set, about 28-32 minutes.
Step 8 –Let the brownies cool completely on a wire rack.
Step 9 –Cut the brownies into squares.
Step 10 –Serve.
