  • 1 (24-ounce) package frozen corn
  • 1/2 cup red onion, finely chopped
  • 2 jalapeño peppers, stemmed and seeded, finely chopped
  • 1 large roasted poblano pepper, peeled and seeded, finely chopped
  • 1/4 cup fresh cilantro, finely chopped
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon fresh lime juice
  • salt, to taste
  • tortilla chips, to taste, for serving

Directions

Step 1 –Cook the corn according to the package directions.

Step 2 –Spread the corn on a baking sheet to cool.

Step 3 –In a large bowl, add the cooled corn, the red onion, the jalapeño peppers, the poblano pepper, the cilantro, the lemon juice, and the lime juice and mix gently to combine.

Step 4 –Season the salsa with the salt.

Step 5 –Serve with the tortilla chips.
