Ingredients
For the nachos:
- 1 tablespoon olive oil
- 1 pound ground beef
- 2 cloves garlic, minced
- 1 (1.25-ounce) package taco seasoning
- 12 ounces tortilla chips
- 1 (15-ounce) can black beans, drained and rinsed
- 1 cup corn kernels, frozen, canned, or roasted
- 1 cup cheddar cheese, shredded
- 1/2 cup Monterey Jack cheese, shredded
For the toppings:
- 1 Roma tomato, diced
- 1/4 cup red onion, diced
- 1 jalapeño, thinly sliced
- 2 tablespoons sour cream
- 2 tablespoons fresh cilantro leaves, chopped
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –Lightly coat a baking sheet with nonstick spray.
Step 3 –Heat the olive oil in a large skillet over medium-high heat.
Step 4 –Add the ground beef and the garlic to the oil and cook, while crumbling the beef, until the meat is no longer pink, about 3-5 minutes. Drain the excess fat.
Step 5 –Stir the taco seasoning into the meat mixture.
Step 6 –Place the tortilla chips in a single layer onto the prepared baking sheet and top them with the ground beef mixture, the black beans, the corn, the cheddar cheese, and the Monterey Jack cheese.
Step 7 –Place the pan into the oven and bake until it is heated through and the cheese has melted, about 5-6 minutes.
Step 8 –Serve with the tomato, the red onion, the jalapeño, the sour cream, and the cilantro.
