That’s asking way too much of you (haha). It’s a good thing this Simple Black Bean Salad exists so you don’t have to overdo things! This crunchy, fresh, veggie-filled salad is a breeze to make… even though the creamy avocado dressing is made from scratch! You’ll be wowing the masses without breaking a sweat… and that’s the way we like it. Simple Black Bean Salad is the deliciously serendipitous solution to all your socializing woes!

Ingredients
For the salad:
- 1/2 cup red onion, thinly sliced
- water, to taste, cold
- 8 cups mixed salad greens
- 2 medium ears corn, kernels removed, or 2 cups frozen corn, thawed and patted dry
- 1 pint grape tomatoes, halved
- 1 (15-ounce) can black beans, rinsed
For the dressing:
- 1 medium ripe avocado, pitted and roughly chopped
- 1/4 cup cilantro leaves
- 1/4 cup lime juice
- 2 tablespoons extra-virgin olive oil
- 1 clove garlic, minced
- 1/2 teaspoon salt

Directions
Step 1 –Place the sliced onion in a medium bowl, cover with the water, and let soak until ready to serve.
Step 2 –In a food processor, add the avocado, the cilantro, the lime juice, the oil, the garlic, and the salt and process, scraping down the sides as needed, until smooth and creamy.
Step 3 –In a large bowl, combine the salad greens, the corn, the tomatoes, and the beans.
Step 4 –Drain the onions and add them to the salad.
Step 5 –Drizzle the salad with the avocado dressing and toss to coat.
Step 6 –Serve.
