It really doesn’t get much simpler than the Simple Breakfast Casserole! Fluffy eggs accompanied by some yummy, tender potatoes and classic breakfast vegetables for a touch of savory flavor and garden-freshness! All baked together with a blanket of cheddar cheese on top! There may not be anything fancy about Simple Breakfast Casserole, but it sure will impress your taste buds!
Ingredients
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 1 medium green bell pepper, diced
- 2 medium russet potatoes, diced into 1/2-inch cubes
- 3/4 teaspoon salt, divided
- 3/4 teaspoon ground black pepper, divided
- 6 large eggs
- 1/2 cup cheddar cheese, optional, shredded
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Lightly grease a 9-inch square casserole dish.
Step 3 –In a large skillet over medium heat, heat the olive oil.
Step 4 –Add the onions to the hot oil and sauté for 1 minute.
Step 5 –Add the green peppers, the potatoes, 1/2 teaspoon of the salt, and 1/2 teaspoon of the black pepper and sauté, while stirring, until the onions are soft and tender, about 4 minutes.
Step 6 –Transfer the vegetable mixture to the prepared casserole dish, spreading it out evenly.
Step 7 –In a medium mixing bowl, add the eggs, the remaining salt, and the remaining pepper and beat to combine.
Step 8 –Pour the egg mixture evenly over the vegetables in the casserole dish.
Step 9 –Sprinkle the cheddar cheese on top of the casserole dish.
Step 10 –Bake until the eggs are cooked firmly, about 35-40 minutes.
Step 11 –Serve.
