Ingredients
- 1 (1-pound) head cauliflower
- 1 (10.5-ounce) can cream of chicken soup
- 1/2 cup sour cream
- 2 ounces sharp cheddar cheese, grated
- 1/4 cup panko breadcrumbs
- 1/4 cup salted butter, thinly sliced
- fresh flat-leaf parsley, optional, to taste, chopped, for garnish
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Coat an 8-inch square baking dish with cooking spray.
Step 3 –Cut the cauliflower into florets.
Step 4 –Bring a large saucepan of salted water to a boil over high heat.
Step 5 –Add the cauliflower florets and boil until just tender, about 4-5 minutes.
Step 6 –Drain the cauliflower florets and return them to the saucepan.
Step 7 –In a small bowl, add the cream of chicken soup and the sour cream and stir to combine.
Step 8 –Add the soup-sour cream mixture to the cauliflower and toss to combine.
Step 9 –Transfer the cauliflower mixture to the prepared baking dish.
Step 10 –Sprinkle the cauliflower mixture with the cheese and the panko.
Step 11 –Dot the top of the caluiflower mixture with the butter.
Step 12 –Bake until the casserole is bubbly and the panko is golden, about 30 minutes.
Step 13 –Serve garnished with the parsley.
