Ingredients

  • 3 tablespoons avocado oil
  • 1 large yellow onion
  • 2 pounds ground beef or ground lamb
  • 5 large cloves garlic, minced
  • 2 large carrots, chopped
  • 2 tablespoons rice vinegar
  • 2 tablespoons liquid aminos
  • 1/3 cup water or beef broth
  • 1 cup green peas
  • 2 cups spinach
  • 1 teaspoon sea salt, or to taste
  • 2 1/2 pounds sweet potatoes, boiled, skinned, and mashed

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Add the avocado oil to a large non-stick skillet and place the skillet over medium heat.

Step 3 –Add the chopped onion and sauté, stirring occasionally, until the onion begins to brown, about 5-8 minutes.

Step 4 –Move the onions to one side of the skillet and add the ground meat to the other side. Do not break it up yet.

Step 5 –Allow the beef to brown on one side, for about 2-3 minutes.

Step 6 –Flip the beef and brown on the other side, about 2-3 minutes.

Step 7 –Use a spatula to break up the beef and stir it into the onions.

Step 8 –Add the garlic, the carrots, the vinegar, the liquid aminos, and the water.

Step 9 –Cover the skillet with a lid and allow the flavors to meld, about 2-3 minutes.
