Simple Steak Fajitas

We love Tex-Mex food for a lot of reasons. It’s always full of flavor, color, and fun! But one of our absolute favorite things about it is it’s pretty easy to make… take Simple Steak Fajitas, for instance. In under 30 minutes, you can have juicy, rosy steak and fresh, tender veggies ready to eat with very, very minimal effort. Then, you consider that you can serve this yumminess in a tortilla, over a bowl of rice, on top of a salad, sprinkled all over tortilla chips, and wow… that’s a lot of options, which then makes you wonder how any other type of cuisine can compete?! We don’t understand it, but we’re just glad dishes like Simple Steak Fajitas exist!

Ingredients

  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 3 cloves garlic, minced
  • kosher salt, to taste
  • ground black pepper, to taste
  • 1 1/2 pounds flat iron steak
  • 2 1/2 tablespoons canola oil, divided
  • 1 red bell pepper, cut into strips
  • 1 yellow bell pepper, cut into strips
  • 1 red onion, cut into wedges

Directions

Step 1 –Preheat the grill to medium-high heat.

Step 2 –In a small bowl, combine the chili powder, the cumin, the paprika, the garlic, the salt, and the pepper.

Step 3 –Season the steak with the spice mixture.

Step 4 –Brush the steak with 1 tablespoon of the oil.

Step 5 –Add the steak to the grill and cook, flipping once, until it reaches an internal temperature of at least 145 degrees F for medium-rare, about 4-5 minutes.

Step 6 –Let the steak rest for 5 minutes.

Step 7 –Cover the red bell peppers, the yellow bell peppers, and the onion in the remaining oil and season with the salt and the pepper.

Step 8 –Add the peppers and the onions to the grill and cook, turning occasionally, until they are charred and tender, about 6-8 minutes.

Step 9 –Thinly slice the steak against the grain.

Step 10 –Serve the steak with the peppers and the onions.
