Ingredients
- 1 pound ground mild Italian sausage
- 1 (30-ounce) bag frozen shredded hash brown potatoes, thawed
- 15 large eggs
- 1 cup heavy whipping cream
- 3 cups pimiento cheese
- 1 cup green onion, chopped
- 1 (4-ounce) can diced green chiles
- 1 1/2 teaspoons kosher salt
- 1/2 teaspoon ground black pepper
- 1 cup cheddar cheese, shredded
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Spray a 9×13-inch baking dish with cooking spray.
Step 3 –In a large skillet, cook the sausage over medium heat until browned and crumbly, about 6-8 minutes.
Step 4 –Drain the grease from the skillet.
Step 5 –In a large bowl, stir together the sausage and the hash browns.
Step 6 –In another large bowl, whisk together the eggs and the heavy cream until smooth.
Step 7 –Stir the pimiento cheese, the green onions, the chiles and their juices, the salt, and the pepper into the egg mixture until well-combined.
