Sinful Sun-Dried Tomato Pasta uses bright, sweet sun-dried tomatoes as the base for a rich, creamy, tangy sauce complete with plenty of garlic and herb flavor… exactly the kind of sauce fettucine was made to scoop up! Ingredients
- 1/2 cup jarred sun-dried tomatoes
- 2 tablespoons butter
- 2 cloves garlic, minced
- 8 ounces fettuccine
- 1/2 teaspoon dried basil
- pepper, to taste
- 2 cups chicken broth
- 2 ounces cream cheese
- 1 cup whole milk
- 1/4 cup parmesan, grated
Directions
Step 1 –Chop the sun-dried tomatoes into small pieces.
Step 2 –In a deep skillet over medium heat, melt the butter.
Step 3 –Add the garlic and cook, while stirring, until fragrant, about 1 minute.
Step 4 –Add the fettucine, the chopped sun-dried tomatoes, the dried basil, the pepper, and the chicken broth to the skillet and cover.
Step 5 –Raise the heat to high and bring the pasta mixture to a boil.
Step 6 –Stir the pasta mixture, then replace the lid.
Step 7 –Reduce the heat to low to maintain a simmer.
Step 8 –Simmer the pasta until most of the broth is absorbed and the pasta is tender, about 8-12 minutes. Make sure to stir every few minutes and replace the lid after each time.
Step 9 –Cut the cream cheese into chunks and stir them into the pasta mixture until melted.
Step 10 –Add the milk and stir until smooth.
Step 11 –Add the parmesan and stir until melted and smooth.
Step 12 –Serve.
