Ingredients
- 3 cups corn, fresh or frozen
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- chili powder, optional, to taste
- paprika, optional, to taste
- cumin, optional, to taste
- cilantro leaves, optional, to taste, for garnish

Directions
Step 1 –If the corn is fresh, on a cutting board with a sharp knife, cut the kernels from the cobs. If the corn is frozen, no thawing is necessary.

Step 2 –In a cast-iron skillet over medium-high heat, add the corn, the salt, the black pepper, the chili powder, the paprika, and the cumin, and cook, while stirring constantly, until lightly charred, about 5-6 minutes.
Step 3 –Serve garnished with the cilantro.
